Our Story

As joint founders and 50% owners of another distillery, Shane & Alison gained a lot of distilling knowledge and experience. Upon leaving they acquired 50% of the unsecured aging whisky that they brewed and helped distill.

Stonehouse installed a 400L German column still, called Matilda, early in 2024 and we’re producing a range of fresh and tasty gins, including a London Dry and a Strawberry & Lime.

We’re one of the few small batch distillers who make our own whisky wash, and using our 17 years of brewing knowledge, we’re aging some interesting whisky expressions for the future.

While we wait for those to come ready, we’re taking the whisky we produced at the other distillery and releasing some unique single cask finishes. There will only be a few casks released each year, so check out our online shop for availability.

Our Whisky

Being a small craft distillery lets us be adventurous with cask choice, cask charring, barley & yeast.

Our whisky usually starts its aging in ex-bourbon casks, but the imperfections in wood mean that two casks from the same bourbon distillery can taste different, so we regularly taste individual casks (it’s a tough job) and then decide the best cask to finish in. 

We have a great relationship with Speyside Cooperage and they help us source interesting barrels, pipes & barriques.

Gin & Vodka


LONDON DRY GIN – Classically juniper forward distilled gin. Our select blend of botanicals release bright citrus & warming spice. Designed for supreme mixability.

STRAWBERRY & LIME GIN – Jam-packed with sweet strawberry and tart, tangy lime. Bursting with natural ripe summer fruit.

VODKA – Quadruple distilled from pure grain spirit and charcoal filtered. Our vodka’s appeal is its smoothness and assured simplicity.
